These cute little happy pockets time and again gives that whole relaxing weekend vibe, but don’t you think life would be so much better if we get to experience that weekend vibe the whole week. Yes!!! Absolutely, you are guessing it right. This effortlessly amazing recipe makes the most fluffy and airy yet healthy pancakes of all times. You just need a few basic ingredients that are probably lying around in your kitchen right now

Banana Oatmeal Pancakes
Ingredients in banana oatmeal pancakes
2 Super Ripe Bananas
2 Eggs
Half cup milk (can also use unsweetened almond milk)
1 cup Gluten-Free Rolled Oats
1 tsp Baking Powder, a pinch of Cinnamon,
1 tsp Vanilla essence and a pinch of salt
Method to prepare:
- Put all the ingredients in the blender and Blend, Blend and Blend until it turns into a smooth silky batter.

2. Take out the batter in a big bowl and let it sit for 3-5 mins. Meanwhile heat up the pan.

3. Now, add some olive oil (recommended) or any other cooking oil of your choice to the pan, keeping the flame on a medium setting.
4. Now pour 1 ladle full of batter into the pan and spread it flat to cook until golden brown for 2-3 minutes.

5. When tiny bubbles appear on the top it’s time to FLIP and Cook for more 2-3 minutes.

And, Voila!!! Your delicious brunch for the weekend is ready. Serve these with fresh fruits and maple syrup or chocolate syrup as per your mood.

Blue Berry Pancakes
Ingredients in Blue Berry pancakes:
1 cup milk
Melted Butter
1 and half cup flour
2 tablespoons sugar
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
1 egg
1 cup fresh blueberries
Method to prepare:
- Sift all the dry ingredients (flour, sugar, baking powder, baking soda, salt) together in a large bowl.
- To another bowl add the wet ingredients and whisk until turn smooth. Now gradually add this to the dry mixture in order to avoid any lumps formation and whisk well till combined properly.
- Fold in some blueberries together with the batter and Set aside for 5 minutes.
- Meanwhile heat up the pan, add some butter, keeping the flame on medium setting.
- Now pour 1 ladle full of batter into the pan and spread it flat to cook until golden brown for 2-3 minutes.
- When tiny bubbles appear on the top it’s time to FLIP and Cook for more 2-3 minutes.

Classic Fluffy Everyday Pancakes
Ingredients in Classic Fluffy pancakes:
1 cup Flour
2 tsp Baking Powder
2 tbsp White Sugar
¾ cup plus 2 tablespoons of Milk
1 Large Egg
2 tbsp melted Butter, Unsalted
1 tsp Vanilla Essence
Pinch of Salt
Olive Oil for cooking
Method to prepare:
- Sift and mix all the dry ingredients together into a large bowl.
- In another bowl, put together egg, milk, vanilla essence, and melted butter. Do not use hot butter as it will cook your eggs eventually. So be careful!!!
- Pour the wet ingredient mixture into the dry ingredients gradually and whisk till combined well.
- Here, The batter consistency should be thick, but without any lumps. Add milk to adjust the consistency if feels too thick. Set it aside for 10 minutes.
- Meanwhile heat up the pan, brush up some oil, keeping the flame on a medium setting.
- Now pour 1 ladle full of batter into the pan and spread it flat to cook until golden brown for 2-3 minutes.
- When tiny bubbles appear on the top it’s time to FLIP and Cook for more 2-3 minutes.
